Best Restaurant Newcomer of the Year in the Which?
Good Food Guide 2009.
MICHAEL WIGNALL who recently joined Pennyhill Park as
Head Chef of the newly refurbished Latymer, has wasted no time
and delivered impressive changes within The Latymer which
have just been recognised by this prestigious award.
On the menu guests can expect to enjoy a selection
of inspirational new dishes, using his trademark technical,
complex and carefully crafted cooking style yet daily he strives to
evolve his unique style to ensure diners are taken to another
level.
A word from Chef himself...
"I was extremely excited recently to stumble
across a premier supplier for an ingredient that has been
at the back of my mind since teenage years and a trip to Spain
later in life. Goat, yes you heard right! I distinctly
remember it as a highlight to a very fond memory
(although I appreciate the sunny surroundings and good wine
may have contributed) and have wanted to feature it on my menu
for some considerable time.
After several experiments and trials, we feel we have
now done it justice and you will soon see 'Pot Roasted,
Slow Poached and Sauteed Goat on a Cassoulet
of Fresh Garden Peas, Broad Beans served with Olive Gnocchi,
Summer Truffles and Pea Shoots' being served in The Latymer... ah,
takes me back!"
